½ pkg Bee Hoon (about 200g)

2 eggs (beaten)

3 garlic (crushed)

100g of luncheon meat (diced)

1 small carrot (shredded)

100g fresh prawn (shelled and diced)

1 tbsp of olive oil

1 tsp of olive oil

3 tbsp of light soya sauce

Dash of pepper

1.       Soak the bee hoon in hot water till it is soft (about 5mins) and drain it dry. Set aside.

2.       Add 1 tsp of olive oil into Le Creuset Marmite 26cm, heat up on medium heat about 2mins or there is smoke wave coming out. (Do not heat up any empty pot)

3.       Add in carrot, luncheon meat and fresh prawn. Frying about 2-3mins. Dish out and set aside.

4.       Add in 1 tbsp of olive oil, pour in the eggs into the pot. Fry the egg till cooked, then add in bee hoon and the rest of the ingredients that have been cooked earlier. Continue frying it evenly for 3mins. (After the first min, turn the heat down to low and continue to fry for 2 minutes).

5.        Add in light soya sauce and pepper, fry it evenly for 2 mins.

6.       Dish out into L e Creuset 23cm Square Dish or Le Creuset 24cm Oval Dish and serve.

Note: Luncheon meat will produce oil, so lesser oil can be used and it is salty on its own. No salt is needed. Results may vary if recipe is not cooked with Le Creuset Cast Iron Product.
